  • 0.2 1.5 pounds, cut into bite-sized pieces chicken breast
  • 0.2 4 cups cooked rice
  • 0.2 1, zest and juice lemon
  • 0.2 2 tablespoons olive oil
  • 0.2 2 cloves, minced garlic
  • 0.2 1 teaspoon salt
  • 0.2 1/2 teaspoon black pepper
  • 0.2 2 tablespoons, chopped fresh parsley
  • 0.2 5, optional for topping eggs

Instructions

1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and cook for 30 seconds until fragrant.
3. Add chicken pieces, season with salt and pepper, and cook until golden brown and fully cooked, about 8โ€“10 minutes.
4. Stir in the cooked rice, lemon zest, and juice.
5. Mix well and cook for another 3โ€“4 minutes to heat through.
6. Adjust seasoning to taste and sprinkle with chopped parsley.
7. (Optional) Fry or scramble eggs separately and serve one on top of each portion.
8. Serve warm and enjoy.
